Market Fruit and Yogurt Parfaits

This is a light and healthy summer dessert or snack. Serve these after some hearty Upscale Italian Beef Sandwiches. Be good to yourself and buy your fruit at the Chicago Green City Market. Tell farmer Mick Klug that Chef Susan sent you!
Makes 8 servings
Ingredients
- 6 cups
- assorted mixed fruits from Mick Klug Farms, whatever is in season
- 4 cups
- whole milk plain, vanilla or maple flavored yogurt
- 1/2 cup
- toasted nuts or organic granola (try Milk and Honey granola)
- 1 Tablespoon
- sliced mint or basil
- 1/2 cup
- organic honey (from growing power), optional
Method
1. Pit or hull fruit as needed. Slice into bite-sized pieces.
2. Spoon 1/4 cup yogurt into each of 8 parfait glasses or bowls.
3. Spoon about 1/3 cup fruit onto the yogurt.
4. Spoon 1/4 cup yogurt on top of the fruit.
5. Top with remaining fruit and sprinkle with nuts or granola. Divide the mint or basil among the glasses.
6. If using, drizzle organic honey over each serving.
