Tavern Beer Cheese

I started making this while I was a student at Lawrence University in Appleton Wisconsin. This recipe is an adaptation of what we serve at West Town Tavern.
Makes serves 8 servings
Ingredients
- 3/4 pound
- grated sharp cheddar cheese
- 6 ounces
- grated Parmesan cheese
- 1 1/2 teaspoons
- Tabasco sauce
- 3 Tablespoons
- Worcestershire sauce
- 1 Tablespoon
- chile powder blend
- 1/2 teaspoon
- garlic powder or granulated garlic
- 1/4 cup
- beer, or a little more
- 1/4 cup
- chopped Italian flat-leaf parsley
Method
Combine cheeses in a large bowl.
Add Tabasco, Worcestershire, chile powder and garlic. Mix well.
Puree mixture in a food processor. Add beer to make a thick spread.
Scrape cheese back into large bowl and mix in parsley.
Serve at room temperature with crackers or toasts.
